With Love to LARA


I love LARAbars. These vegan, gluten-free, healthy treats satisfy a sweet tooth. Coconut Cream Pie and Gingersnap are my go-to flavors. But sometimes there isn't a Whole Foods Market around. Here's my inspired solution for making these at home.

Blueberry Bliss
1/4 cup dried blueberries
1/4 cup roughly chopped dates
1/3 cup nuts (raw almonds & walnut pieces)
1/2 teaspoon of finely grated lemon zest

Pulse the berries and dates in a food processor. Set aside this fruit paste and pulse the nuts in the Cuisinart until finely chopped. Fold together the fruit, nuts and lemon zest. You can use saran to shape it into an authentic rectangle. Enjoy it straight away, or before/after your next run/ride/yoga/swim session. The dates are loaded with carbohydrates which are the fuel you need for active fun. In lieu of blueberries, also try unsweetened coconut, dried cherries, raisins, dried apricots...and sub in pecans, peanuts or cashews. The options are endless!

Here is one of the four new flavors LARA just introduced - Chocolate Chip Cookie Dough. In the name of "research", I'll probably have to do a lot of nibbling to get this recipe just right *wink, wink* It's actually just four ingredients - cashews, dates, chocolate chips, and salt. So there you have it kids - do try this at home!
