Everything's Just Peachy

Summer Salad with Peach Dressing

1/2 cup walnuts
1/2 cup chopped peaches
1/4 cup orange juice
1 tablespoon lime juice

2 peaches, sliced thinly
1/2 cup walnuts
Several cups of greens - spinach, mesclun, or romaine work nicely
Feta cheese, cucumber, and radishes - optional

Prepare the dressing by pulsing the walnuts in a food processor. Add the peach pieces. Thin out your paste with the orange juice, lime juice, or a splash or water/olive oil. Serve over greens radishes, cucumbers, feta, etc. Find other summer salads at Whole Foods. Were you admiring the greens in the photo above?? Me too. Modesty aside, I'm proud of my little lettuce patch (picture below).

Much to my amazement, my wine crate container garden continues to grow! On this week's to do list, the spinach and mesclun were very ready to be harvested. Hence, today's salads.

Peaches, Basil and Red Onion Side Salad

3 peaches, sliced 1/2 inch thick
1/4 red onion, sliced thinly
1/3 cup fresh basil (leaves torn)
Juice of 1/2 lemon
1/2 tsp sea salt and ground pepper to taste
1 tablespoon extra virgin olive oil

Toss together peaches, red onion, basil, lemon juice, salt and pepper.

  1. Yum, yum, yum. Love summer produce. It just makes me so happy, and you simple, yet gorgeous salads look perfect. Can't wait for peach season around here. The local veggie stand gets deliveries from Georgia and people buy them by the basketful. Amazing. Pinning these for later on this summer. Thanks for sharing!
