Are you keen for peaches? Is your market filling up with fresh fruit? Grab a handful of peaches, turn off your oven (too hot!) and toss together this peach crumble.
Here's the ingredient list (serves 2 peach lovers): four peaches (I used yellow and white); 1 cup of pecans; 5 dates; a dash of cinnamon and a splash of vanilla extract.
Start by making the crumble: in a food processor, combine pecans, dates (pits removed), vanilla extract, cinnamon, and a spoonful of water. Process until smooth, with a few crunchy bits of pecans still in tact. You may need to play with the ingredient quantities (more pecans? less vanilla?) Next, slice your peaches - you may wish to process a few bits for a jam-like topping. Otherwise, just toss your peaches, crumble, and grab a spoon. On a very hot night, this dish is just begging for a scoop of vanilla ice cream. Garnish with a few more chopped pecans.
