Just because you have food allergies or are watching your sugar intake doesn't mean you can't still enjoy decadent summer desserts. I started with this beautiful bowl of berries....
But it was missing something...
Enter this really easy (and raw) "whipped cream" topping.
Don't you just want to lick the bowl? (Confession: I did).
1 1/3 cup raw cashews (soaked for 2 hours)
1/2 cup water
3 tbsp. agave (or 2 mejdool dates)
1 tsp. vanilla extract
Combine cashews, agave, vanilla extract, and 1/4 cup water in the food processor for about 5 - 7 minutes. More time = more fluff. When the cream has a smooth consistency, add the final 1/4 cup of water and blend again. You're done! Serve over fresh fruit.
