How Sweet It Is

When I dip, you dip, we dip...
Snack time! Sweet, salty, and sugar free? Here's a twist on caramel apples.
Ingredients: 10 mejdool dates (remove pits and soak in water for 1 hour to soften skin); 6 tbsp. coconut milk or another non-dairy milk (almond, rice, etc.); 1 tbsp. vanilla; pinch of salt.

Instructions: In a medium bowl, soak the dates. In a blender or food processor, combine dates, coconut milk, sea salt, and vanilla. Blend until creamy. If it's too thick, add a bit more milk. Scoop out the center of an apple and scoop the caramel inside. Serve with apple slices.
